The Cardboard Cake

It’s time to introduce your palate to a little cake with a big point to prove: that you can have a gluten-free diet and not deprive yourself of the pleasure of eating delicious baked goods.

This cake is the culmination of a 10 year journey which began when my youngest daughter and I were diagnosed with coeliac disease. I didn’t want her to miss out on the joy of food that’s at the heart of our family, so I started gluten-free baking and founded Wholegreen Bakery.

We call it The Cardboard Cake, which is ironic, because as you’re about to find out, like everything we bake at Wholegreen, it tastes like anything but. Bon appetit!
